Celebrity chef Ming Tsai shares three mouthwatering recipes:
Double Fortune Bings
material:
1 tablespoon minced garlic
1 tablespoon chopped ginger
1 long onion, finely chopped, separated into green and white
1/2 pound sliced shiitake mushrooms
3 tablespoons hoisin sauce
1 cup peeled edamame
1 pack of lumpia wrapping paper
Liquid Just Egg for washing eggs
grapeseed oil for cooking
kosher salt and freshly ground black pepper
1 dim sum dipper
Preparation:
Heat a wok over high heat, coat with oil, sauté garlic, ginger and scallion whites and season to taste. Add the shiitake mushrooms and stir the wok until tender, about 3 minutes.
Add the hoisin sauce, stir, and add the edamame. Transfer to a bowl and cool.
make an egg wash. Cook in a greased frying pan until golden brown, about 5 minutes. Served with dim sum dipper.

material:
4 cloves of garlic
2 tablespoons julienned ginger
1 pound baby boy chow, washed
1/2 cup vegetable stock
2 tbsp Veggie Oyster Sauce (Wangjashan)
Juice and zest of 1 lemon
grapeseed oil for cooking
kosher salt and freshly ground black pepper
Preparation:
Heat oil in a wok, fry garlic, ginger and wok over high heat to adjust the taste. Drop glaze with stock and reduce by 1/2. Add the sauce to taste, add the juice and garnish with lemon zest.
Double Pouch of Whole Ginger Chicken
material:
1 ginger hand washed and thinly sliced
1 bunch green onions, 2 inch cut
2 quarts chicken stock
1 tablespoon crushed toasted white peppercorns
1 chicken, 3-5 lbs, well washed, dried and well seasoned
grapeseed oil for cooking
kosher salt and freshly ground black pepper
Preparation:
Add ginger, green onions, white pepper, and dashi stock to a small pot with a lid and bring to a boil. Add the whole chicken, cover, and simmer again over low heat. Turn off the pot and let it sit for 1 hour. Whole serve.
